The Sloppy Moe Casserole
1 packet Slo Moe’s Slo Wood Smoked meat of your choice
20ml olive oil
1 large brown onion, diced
1 large green capsicum, diced
400g tin diced tomatoes
¼ cup passata
2 tbs tomato paste
1 tsp chilli flakes
1kg packet frozen potato gems
1 cup mozzarella, grated
1. Preheat oven to 200°C fan-forced.
2. Heat the oil in a large frying pan over medium-high heat. Add the onion and green capsicum and fry until softened.
3. Add the tin of diced tomatoes, tomato paste, passata, chilli flakes and Slo Moe’s meat of your choice. Stir well to combine and let the mixture simmer for 10 minutes.
4. Pour the sloppy moe mixture into a casserole dish. Place the potato gems in a single layer over the mixture and sprinkle with mozzarella. Place the dish in the oven and cook for 25-30 minutes or until potato gems are golden. Now tuck in to this pretty as a peach Southern treat!
