Tex Mex Moe’s Classic Nachos



  • 1 packet Slo Moe’s Slo Wood Smoked meat of your choice

  • 10ml olive oil

  • 1 cup canned black beans, drained

  • 200g corn chips

  • 1 cup cheddar, grated

  • 1 radish, finely sliced

  • ¼ cup coriander, chopped

  • 1 ripe avocado

  • ½ lime, juiced

  • 1 red chilli, finely sliced


  • 2 roma tomatoes, diced

  • 1 small red onion, diced

  • 1 cup coriander, roughly chopped

  • 1 lime, juiced

  • 50g sliced pickled jalapenos, roughly chopped

  • 10ml olive oil

  • Salt and pepper to taste




1. Preheat oven to 180°C fan-forced.

2. To make the tomato salsa, in a bowl combine all the ingredients and season to taste. Leave the salsa to marinate for 10-15 minutes to let the flavours infuse.

3. In a small bowl, use a fork to mash together the avocado, juice of ½ a lime, 10ml olive oil and season. Set to one side.

4. Scatter the corn chips in a large ovenproof dish, top with Slo Moe’s meat of your choice, the black beans and crumble cheddar over the dish. Bake in the oven for 10 minutes, until cheese is golden.

5. Top with tomato salsa, avocado, radish, remaining coriander, sliced chillies and season to taste. Squeeze lime juice over the top if you like it tangy and a drizzle of hot sauce if you like an extra kick! This cheesy Tex Mex delight is ready to go!
