San Choy Wow
1 packet Slo Moe’s (any Moe’s goes)*
2 cups cooked white rice
12 gem lettuce leaves
1 small red onion, thinly sliced
1 Lebanese cucumber, julienned
1 cup bean sprouts
1/2 cup coriander
100ml store bought Asian salad dressing
2 small red chillies, thinly sliced
2 tbs crushed peanuts
*We used Slo Moe’s Wood Smoked Pork
1. Heat your Slo Moe’s according to packet instructions.
2. Divide the rice amongst the lettuce leaves and top with Slo Moe’s, cucumber, red onion, and bean sprouts. Drizzle with Asian salad dressing and garnish with chilli, coriander and crushed peanuts. Easy as 1, 2, eat!
