1 packet Slo Moe’s (any Moe’s goes)*
1 cup cheddar, grated
Hot sauce, to serve
Jalapenos, to garnish
1 1/2 cups coleslaw mix
3 tbs mayonnaise
1 cup uncooked white rice
1 tbs cumin
1 tsp dried coriander
2 tsp onion powder
1/2 tsp cayenne pepper
1 tbs spicy Cajun seasoning
*We used Slo Moe’s Wood Smoked Beef Brisket
1. Let’s spice some rice. Combine the uncooked rice with the cumin, dried coriander, onion powder, cayenne pepper, and spicy Cajun seasoning. Cook the rice according to packet instructions. Once the rice is cooked, fluff the rice with a fork and set to one side.
2. To make the coleslaw, in a small bowl, combine the coleslaw mix, mayonnaise, and lemon juice. Set to one side.
3. Heat your Slo Moe’s according to packet instructions.
4. Now for the pita pockets, cut the pita in half and gently separate, to create a pocket. Fill it with the spicy rice, Slo Moe’s and coleslaw. Top with cheese, jalapenos, and drizzle with hot sauce. Serve and enjoy pita this and a pita that!
